I love Macadamia nuts, but geez y'all, they're expensive. So when I came across these candies on the aisle at Costco, I knew these were the answer. Chopped up and put into a simple cookie recipe, these are the perfect blend of salty, sweet and crunchy.

You guys, these are delish! Great crust, cake-like centers, not too sweet and the perfect amount of mint. It’s about to get chilly here in DFW, and that makes me want to bake!
